NJ’s Banana Muffins

A taste of the retreat at home!

Ingredients:

  • 3 very large bananas

  • 2/3 cup melted butter or vegetable oil

  • 2/3 cup milk

  • 1 cup raw sugar or coconut sugar

  • 2 large eggs, lightly beaten

  • 1 cup plain flour - 2 cups self-raising flour

  • 1 teaspoon baking soda, bicarbonate of soda, or baking powder

  • 1 teaspoon cinnamon

  • 1 cup chopped walnuts (we used the walnuts on top and left some without for school)

Instructions:

1. In a bowl, mix the melted butter, milk, and bananas with the lightly beaten eggs.

2. Add all the dry ingredients and mix well using a spatula (whisking may make the dough tough).

3. For muffins, bake at 160°C for 30 minutes.

4. For banana bread, bake at 160°C for 50 minutes, then lower the temperature to 150°C and bake for an additional 30 minutes.
